Prior to beginning our discussion, it should be noted that microwaves come in many different power ranges. It is difficult to cover them all. We will try to provide a variety of cooking times for different power levels, but at the least will identify the power level used. You may need to adjust per the power setting on your microwave.
Defrosting Fish in the Microwave
For most microwaves, the defrost setting is fairly consistent. Therefore the times listed here will be close for whatever microwave you have. Place the fish in a microwave safe container. In general, fish need 4-6 minutes per pound on the defrost cycle to get thawed. Half way through the defrost cycle, turn over and rearrange fish. Fish should be cold, perhaps even a bit icy at the end. If necessary, allow the fish to thaw for up to 20 minutes at room temperature. Do not leave at room temperature longer.
Cooking Fish in a Microwave
Just like when you cook fish in hot oil, in an oven, or on the grill, fish should be cooked at a high temperature for a relatively short period. The fish will continue to cook internally for some length of time after the microwave is finished. The cooking times listed are for a 700 watt microwave. It is assumed the fish has been previously thawed.
- Whole Fish = 6-8 minutes per pound
- Individual Fillets = 4-5 minutes per pound
- Steaks = 4-5 minutes per pound
The fish will be done when the meat is flaky. You can cook the fish longer if necessary, but do not overcook.
Salmon Steak Recipe
- Four 1.5 lbs salmon steaks cut approximately 1.5 inches thick
- Butter (1/3 to 1/4 cup)…No Fat Substitute Works
- Chopped Parsley
- Chopped Onion
- Diced Mushrooms
- Lemon Juice (2 Tablespoons)
- Salt and Pepper
In a saucepan melt butter and add parsley, onions, lemon juice, and mushrooms. Put half in the bottom of a bake dish. Lay in the salmon steaks. Season with salt and pepper. Add the remaining mixture. Cover the salmon steaks and place in the microwave. Cook for between 6 and 10 minutes. Let stand for 3-5 minutes covered. Check to see if the fish is flaky after it has stood for 5 minutes. If not, add time in one minute increments on the microwave.
This recipe can be used with trout fillets, halibut, and many other fish. Do not be afraid to experiment.

Ingredients:
1-2 tbsp olive oil
50g (2 oz) bacon, cut into strips
1 red pepper, de-seeded and chopped
1 onion, finely chopped
1 cloves garlic, finely chopped
60g (2oz) spinach, finely chopped
8 eggs
2 tbsp thyme leaves, chopped
Salt and black pepper
Instructions:
1. Add the oil to a large non-stick pan. Fry the bacon, red pepper and onion together over medium heat until cooked (about 4 minutes). Add the garlic for the last minute of cooking. Stir in the spinach and cook for 30 seconds. Remove from the heat.
2. Turn the grill on to high.
3. Beat the eggs in a large bowl with the thyme and salt and black pepper. Add the bacon mixture to the eggs and stir. Put the frying pan back on a medium heat and pour the eggs into it. Cook for 30 seconds over a medium heat until it set but soft and wobbly. Put the pan under a hot grill until the top is golden and the eggs are puffed up. Serve warm ready to cut into slices.
Ways to make different variations to this Frittata Recipe
- You can change this recipe easily: use fresh coriander or mint leaves instead of thyme; use pancetta or smoked ham instead of bacon; use a finely chopped shallot or a finely chopped garlic clove instead of the onion.
- This recipe can also be halved using just 4 eggs.
- Always choose the freshest eggs you can, especially if you are going to keep this frittata to eat the next day. It’s excellent to pop into children’s lunch boxes: it’s easy to eat, delicious when cold and you can cut it into easy squares.

Just the Right Attitude is more than a food bank in eastern New Orleans.
“Debra South gives out everything from hot meals to hugs,” Ray Reggie said. “She has a personal rapport with everyone. She understands what it means to need help.”
Ray Reggie (now Chairman of the Board of JTRA), managing partner with Premier Promotions, serves on the board of Just the Right Attitude along with Troy Duhon, president of Premier Automotive Group.
In 2002, when the men heard about the little food pantry Debra was operating out of her garage, they decided to offer her a space on the second floor of a car dealership. And Just the Right Attitude began to grow.
“We love her cause,” Ray Reggie said. “Everybody wanted to help.”
— Growing out of need —
The idea for the community resource began a decade ago with a trip Debra made to the food stamp office. She was a mother in her 30s fighting ovarian and thyroid cancer, and she’d had to retire from her accounting job. Her first husband had taken off, and she was surviving on disability checks and help from family and friends.
She didn’t make enough money to feed her son and daughter, but she was rudely told she made too much to qualify for food stamps.
“I felt so humiliated,” she said.
She promised God that if she got better she would find a way to help people who were hungry and struggling.
From that promise, and a few shelves of canned goods, grew a United Way agency that doles out hope and 2.5 million pounds of food a year.
When Ray Reggie asked a man what he’d do without Debra’s food bank, he answered, “I would be hungry.”

In April, Just the Right Attitude, with the help of Ray Reggie, moved into two buildings next to Toyota of New Orleans on the I-10 Service Road. And since then, Debra has been giving out lots of hot meals, boxes of staples and hugs….

We may not all love broccoli but it is pretty well known that it is one of the best, healthiest foods that you can eat. It is loaded with vitamins and fiber and low in fat and calories. Like most vegetables that are dark in color, the dark green color in broccoli means lots of Vitamin A and Vitamin C. It is also almost as high in calcium as milk is. Research is beginning to show that it may actually be anti-carcinogenic. No wonder more and more people are adding to their diet even if they don’t like it.
Another incredible benefit of broccoli is that it is very high in phytochemicals, which are natural substances found in plants. This is important because phytochemicals appear to offer the body protection against certain types of cancers, and they’re also beneficial in prevention of heart disease. So, buck up and eat your broccoli! Try this great recipe I found at the New York Times website.
